As far as jam-making goes, this was a pretty simple process. Blanch, peel, and then puree the peaches in a blender. Simmer the diced peppers in vinegar before adding the peaches and sugar/pectin mixture. Allow to boil, then ladle into sterilized jars and process. In little more than an hour, I had some of my Christmas gifts figured out!

Blend on high for 30 seconds to make a liquified and chopped mixture. STEP TWO: Place a large pot on the stove over medium-high heat. Add the pepper and apple cider vinegar mixture, sugar, red pepper, and salt - stir together. Bring to a boil. Once boiling, add in the box of sure jell and stir.

Add the red pepper flakes, butter, salt, vinegar, and the rest of the sugar to the pot with the peppers, stir to combine. Bring the pot to a full boil over high heat, stirring often. Chop the jalapenos finely and set aside. In a saucepan combine together vinegar,sugar,finely minced garlic and bring to a boil. When the sugar starts to dissolve add the finely chopped jalapenos,reserved seeds and cayenne pepper if using. Continue to cook for 15-20 minutes or until the mixture thickens to a jam like consistency.
