Dduk bok-ki is made from plain dduk that's usually in the shape of long, solid cylinders about the size of my middle finger (I have small hands with pudgy fingers).

Classic Vegan Korean Rice Cake Soup! Growing up, Korean Rice Cake Soup, or Dduk Guk (떡국) was a classic comfort dish I ate frequently so I had to take a stab at making a Vegan Dduk Guk. Traditionally, the recipe is actually quite simple. It is made with a light broth of either anchovy or beef with chewy Korean rice cake, sliced egg and seaweed to top.

Take rice cakes out of bag and soak in a bowl of water. Set aside. Add water, cleaned anchovies, kombu/dashima, 1/2 onion, white part of green onion and beef to a large pot. Bring to a boil. Remove kombu when water boils. Allow soup to boil for about 15 minutes. Remove foam that rises to the top and discard.

1 teaspoon of soy sauce. 1/2 teaspoon of sugar. In a non-stick skillet, heat the olive oil over medium heat. One the oil is heated, gently slide the dduk into the pan, be sure to leave a little space between the pieces of dduk so they don't stick.
